Green Juice Gummies
Fresh, lightly sweet green juice set into soft gummies. A simple way to turn a daily juice into something fun, portable, and easy to enjoy.
Ingredients
Green Juice Base
2 apples
1 cucumber
1 cup baby spinach
1 kale leaf
½ lemon, peeled
1-inch piece fresh ginger
Gelatin Version
1 ⅓ cups fresh green juice (from above)
3 tablespoons gelatin powder
1 tablespoon honey
Vegan Version (Agar)
1 cup fresh green juice (from above)
1 teaspoon agar powder
1 tablespoon agave
Directions
Make the Juice
- Wash all produce well.
- Cut ingredients into pieces that fit easily into your juicer.
- Juice and measure out the required amount.
Gelatin Gummies
- Pour ⅓ cup of juice into a bowl and sprinkle over the gelatin. Let bloom for 5 minutes.
- Heat the remaining juice gently in a small saucepan until hot, but not boiling. Stir in honey.
- Pour the hot juice over the bloomed gelatin and whisk until fully dissolved.
- Pour into molds and refrigerate for 2–3 hours, or until set.
Vegan Gummies (Agar)
- Add 1 cup juice and agar powder to a small saucepan.
- Bring to a gentle simmer and cook for 3–5 minutes, stirring, until agar is fully dissolved. Stir in agave.
- Pour into molds and allow to set at room temperature, then refrigerate.
Notes:
- For best results, strain juice.
- Keep heat minimal to preserve the bright green colour and fresh flavour.
- Gelatin gummies will be softer and more elastic; agar gummies will be firmer with a clean bite.
- Store in the fridge and consume within 3–4 days.
- For best color, make immediately after juicing.
