Mint Chip Bites
These chocolatey bites put leftover Peppermint Hot Cocoa pulp to good use in a simple, no-bake treat. Almond butter and almonds add healthy fats and protein, while hemp seeds contribute minerals and plant-based protein for lasting energy. Naturally sweetened and finished with dark chocolate, they’re a nourishing snack that feels indulgent but supports your body too.
Ingredients
- ½ cup Minty Hot Cocoa pulp
- ½ cup almond butter
- ¼ cup dark chocolate chips
- 3 tablespoons chopped almonds
- 2 tablespoons hemp seeds
- 1-2 tablespoons maple syrup
- ½ teaspoon vanilla extract
- Pinch of sea salt
Directions

Place the pulp, almond butter, and a pinch of sea salt in a mixing bowl. Stir to combine.

Combine the maple syrup and vanilla before drizzling over the mixture and stir to combine. Taste it, adding more maple syrup or another pinch of salt if necessary.

Stir in the chocolate chips, almonds, and hemp seeds.

Use a small ice cream scoop or a tablespoon to create 10-12 protein bites.
