Chocolate Avocado Pudding
Avocados make this pudding creamy, without the need for dairy, while also offering monounsaturated fat, potassium, fiber, and lutein, a plant pigment known to help improve cognitive function. The maple syrup and vanilla make it taste like a delicious dessert.
INGREDIENTS
- 2 ripe avocados
- 4 tablespoons cacao powder (or cocoa)
- 4 tablespoons pure maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
- ½ cup light coconut milk or water, plus more as needed
DIRECTIONS
- Place the avocados, cacao powder, maple syrup, vanilla, and a pinch of salt in the blender, along with a few tablespoons of the coconut milk.
- Blend on the lowest speed to start combining the ingredients for 15 seconds, then stop and scrape down the sides. With the cap off the top, blend on low speed while slowly drizzling in the remainder of the coconut milk.
- Stop and scrape down the sides if needed, and blend one more time.
- Serve immediately or chill for an hour to thicken.
