Piña Colada
A typical piña colada can be loaded with sugar. This version uses fresh ingredients like coconut flakes, fresh pineapple, and tropical macadamia nuts to help balance blood sugar with fiber, healthy fats, and antioxidants.
INGREDIENTS
- 1 cup macadamia nuts (toasted if you’d like)
- 1 ½ cups fresh pineapple, diced
- 3 cups coconut water
- ½ cup dried coconut flakes
- 1 tablespoon lime juice
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- 8 mint leaves
GARNISH
- Coconut flakes for the rim
- Pineapple + mint skewer
DIRECTIONS
- Place all of the ingredients in the M1.
- Process according to the instructions.
- To serve, fill an old-fashioned glass with ice and pour the Piña colada mixture over it. Alternatively, shake with ice and serve.
- Garnish as desired and enjoy.
Note:
- Rub lime juice on the rim of a glass and then roll it in dried coconut.
