    Creamy Pumpkin Smoothie

    This pumpkin smoothie captures all the flavors of fall in a glass. Tangy coconut yogurt blended with creamy cashews gives it a cheesecake-like twist, making it the perfect plant-based healthy treat to celebrate everything we love about the season.

    INGREDIENTS

    • 1 cup pumpkin puree
    • ½ cup coconut yogurt
    • 1 cup cashew milk
    • 1 tablespoon ground flax
    • 2 dates, pitted
    • 1 tablespoon maple syrup
    • 1 teaspoon vanilla
    • ½ teaspoon ground ginger
    • Pinch sea salt
    • 1 cup ice

    DIRECTIONS

    • Add all ingredients to a blender.⁣
    • Blend on high until smooth and creamy.⁣
    • Pour into two glasses. Garnish with extra coconut yogurt, if desired.⁣
    • Enjoy immediately.⁣

    Notes:
    • Optional: Boost with 1–2 tablespoons of natural protein sources such as peanut butter, almond butter, flax meal, or hemp seeds.
    • Best enjoyed immediately, but can be stored in a glass jar or bottle with a lid for up to 24 hours. The smoothie will thicken as it sits, so add a splash of extra milk if needed.
