Hot Spiced Apple Cider with Lemon and Ginger
What could be more cozy than a hot apple cider with warming spices like ginger and cinnamon?
INGREDIENTS
- 8 lemons
- 14 apples
- 2-inch piece of ginger
- 2 cinnamon sticks
- 3 star anise
- 1 tablespoon maple syrup or coconut sugar, to taste
Garnish:
Coconut sugar and cinnamon rim- Cinnamon stick
DIRECTIONS
- Wash all produce well.
- Peel the lemons and core the apples.
- Juice the lemons, then the apples and ginger.
- Place in a large saucepan, skimming off any foam from the juice.
- Add the cinnamon sticks and star anise and warm over medium-low heat.
- Allow the spices to steep for 20-30 minutes.
- Taste, add a little maple syrup or coconut sugar if desired.
- Remove the spices, then ladle into mugs for serving.
Makes: 72 ounces
Tip: This is great served in a large copper pot or a stock pot and ladled into mugs. Line the rim of each mug with a little lemon juice, then dip the rim into a blend of coconut sugar and cinnamon. Allow to dry before using. Alternatively, drop a cinnamon stick in each mug for garnish.
