Creamy Pumpkin Smoothie
This pumpkin smoothie captures all the flavors of fall in a glass. Tangy coconut yogurt blended with creamy cashews gives it a cheesecake-like twist, making it the perfect plant-based healthy treat to celebrate everything we love about the season.
INGREDIENTS
- 1 cup pumpkin puree
- ½ cup coconut yogurt
- 1 cup cashew milk
- 1 tablespoon ground flax
- 2 dates, pitted
- 1 tablespoon maple syrup
- 1 teaspoon vanilla
- ½ teaspoon ground ginger
- Pinch sea salt
- 1 cup ice
DIRECTIONS
- Add all ingredients to a blender.
- Blend on high until smooth and creamy.
- Pour into two glasses. Garnish with extra coconut yogurt, if desired.
- Enjoy immediately.
Notes:
- Optional: Boost with 1–2 tablespoons of natural protein sources such as peanut butter, almond butter, flax meal, or hemp seeds.
- Best enjoyed immediately, but can be stored in a glass jar or bottle with a lid for up to 24 hours. The smoothie will thicken as it sits, so add a splash of extra milk if needed.
