Banana Blueberry Bowl
Frozen bananas and cauliflower offer a creamy base to this bowl that is loaded with essential vitamins and superfoods like ashwagandha, cinnamon, chia, and pumpkin seeds.
INGREDIENTS
- ½ cup unsweetened plant-based milk
- ¼ cup frozen blueberries
- ¼ cup frozen cauliflower
- 2 frozen bananas
- ½ teaspoon vanilla extract
- ½ teaspoon ashwagandha
- ½ teaspoon ground cinnamon
- 1 tablespoon chia seeds
- 1 tablespoon roasted and salted pumpkin seeds, for topping
DIRECTIONS
- Add almond milk, pumpkin puree, bananas, vanilla, ashwagandha, and cinnamon to the blender, and blend until smooth. Stir in the chia seeds.
- Refrigerate for at least an hour, or up to overnight.
- Top with pumpkin seeds and a drizzle of maple syrup, and enjoy.
