Raw Energy Bites

Using leftover almond pulp from homemade nut milk is a smart and sustainable way to boost your snacks with fiber and plant-based nutrients. These Raw Energy Bites combine antioxidant-rich goji berries and cacao nibs with healthy fats from walnuts and coconut, making them the perfect fuel before a workout. Naturally sweetened with dates, they provide quick-release energy while supporting recovery and endurance.

INGREDIENTS

  • ½ cup almond pulp (from 1 batch homemade almond milk)
  • ½ cup walnuts
  • ¼ cup cacao nibs
  • ¼ cup goji berries
  • ¼ cup finely shredded coconut
  • 8 dates, pitted
  • ⅛ teaspoon fine sea salt

DIRECTIONS

  • Add all ingredients to a food processor.⁣
  • Blend until the mixture is sticky and holds together when pressed. If too dry, add 1–2 teaspoons water.⁣
  • Roll into 10 even-sized balls.⁣
  • Chill for 30 minutes to firm up.⁣
  • Store in an airtight container in the fridge for up to 1 week or freeze for up to 1 month.⁣

Note:
  • To make almond milk in the Nama M1, combine 1 cup unsalted almonds, 3-4 cups water, 2 pitted dates, and a pinch of sea salt.
